World Culture Tour: Russia part 6 - Golubsti

Golubsti prepared

Golubsti is one of the more complicated recipes we’ve made in our world culture journey so far. However, with the complication and the time it takes to make, it is really good.


Essentially, it’s like a burrito with a cabbage leaf in place of the tortilla.


Ingredients

  • 6 cups cooked rice.

  • A Large head of cabbage

  • 1 lb ground or cubed ham

  • 1 lb ground turkey or beef

  • 2 large eggs

  • 4 large carrots

  • 2 cups mushroom marinara sauce

  • ¼ cup white vinegar

  • Olive Oil

  • 2 Tbsp butter

  • 1 Tbsp Sour Cream

  • 1 tsp seasoning such as Emeril’s or Mrs. Dash

  • Salt


Directions

  1. Cook your rice.

  2. In a large pot, 2/3 filled with water, bring the water to a boil.

  3. Add in your vinegar and about 2 tsp of salt.

  4. Prepare your cabbage by pealing off the 2 outer leaves and then cutting the core out of it.

5. Boil your cabbage about 10-12 minutes, flipping it over in the pot about halfway through to get it fully cooked.

6. Mix your meats and rice together in a mixing bowl.


7. In a frying pan, grate 2 of your carrots and mix with 3 Tbsp oil and 1 Tbsp butter.

8. Once the carrots have softened, add in 1 cup of the marinara and stir.


9. Add the carrot mixture to your meat and rice mixture, stir.

10. Stir in two eggs.


11. You now have the stuffing, you just need to create your “cabbage burritos”


12. First, you have to prepare your leaves.


13. For larger leaves, cut the stem portion out down the middle of the leaf, leaving each side as 2 separate “tortillas”.

14. With the smaller leaves, cut the bottom stem portion off, leaving the rest of the leaf intact as 1 “tortilla”.


15. Dip about a spoonful into each leaf or leaf portion and roll them up tightly, tucking the ends in to hold your stuffing in place.

16. Place your cabbage rolls into a large pot. The site I retrieved the recipe from suggested a dutch oven in an oven over a stove top boiling pot.


17. Fill whichever pot type you choose till the water comes to the top of your cabbage roll stack.



18. Next, you’ll need to make the Podliva sauce which will cover your cabbage rolls.


1. Heat 2 Tbsp of olive oil and tsp of seasoning (Mrs. Dash). Grate remaining 2 carrots and begin your saute. Add in the sour cream and the remaining cup of marinara sauce.


2. Cook the sauce for about a minute, then pour over your cabbage rolls.


19. If cooking in a Dutch oven within you stove’s oven, preheat the oven to 450 degrees.


20. A - Cover the pot and bake at this temperature for 20-25 minutes.


1. Reduce heat to 350 and bake for 1 hour.


20. B - If you choose instead to use a pot, bring everything to a boil, then reduce to medium heat, cover, and let cook for 40 minutes.
