After a delay in the figurative world tour due to going on a literal 4-state tour, we are back in France.
This time, we decided to make ratatouille while watching Disney/Pixar's Ratatouille to create a theme night.
The Recipe:
Ingredients -
Thinly sliced eggplant.
Thinly sliced zuccini
Thinly sliced yellow squash
Thinly sliced yellow bell pepper
Thinly sliced red bell pepper
Tomato Paste
1/2 chopped onion
3/4 cup water
1/4 cup minced garlic
1 TS olive oil
Salt/Pepper (optional)
Mascarpone cheese
Thyme Leaves (optional)
With your oven preheated to 375 degrees, follow the instructions below -
Stir the tomato paste, onion, garlic, and olive oil, and the optional salt/pepper in a bowl.
Spread your mixture into a 10 in baking pan.
3. Next, arrange your thinly cut vegetables over the top of the spread, alternating the vegetables to really show the color changes.
4. Bake for 45 minutes.
5. When you serve the ratatouille (we chose to server ours over brown rice), add a dollop of the mascarpone cheese and the optional thyme leaves to the top of your dish for accent decoration and some added flavor.
