It's dessert time in our Germany stop, and I wanted to look for something a bit different than German Chocolate Cake or Apple Cake. So, off to Google I went.
I found Rodgrod! Rodgrod is a red berry pudding that originates in Denmark and northern Germany. Aside from the fact that I didn't really know what a currant is, which is one of the 3 types of berries to choose from, the recipe is pretty simple.
You can use rodgrod as a kind of pie filling or just as a dessert by itself with whip cream to top it off. Ingredients:
1.5 lbs of red berries (raspberries, currants, strawberries or a combo of these)
3 cups of water
1 cup of sugar
1/4 cup cornstarch (dissolve in 1/2 cup of cold water)
Whipped Cream - if you want to make your own whipped cream, use 1 cup of heavy whipping cream + 1 TS sugar and some vanilla or almond extract for flavor.
Directions: 1. Clean/cut the fruit and bring to a boil in a saucepan with the 3 cups of water. 2. Reduce heat and let the fruit simmer until it falls apart. 3. Strain the juice and berry seeds from the boiled fruit. 4. Return the fruit to the stove and mix in the sugar, bring once again to a low boil. 5. Reduce the heat, again, to medium and mix in the dissolved corn starch. Allow the cornstarch to thicken, then continue stirring until the mix begins to set up. You're looking for it to be the consistency of a thick, heavy syrup. 6. Refrigerate the mix to allow it to fully cool off, at least 2 hours. 7. Serve in individual glasses or bowls with your whipped cream topping!
